This cheat's version of an Italian favourite is quick, cheap and healthy.

Method

  1. Preheat the oven to 180°C or gas mark 4.
  2. Gently fry the onions in a little olive oil, for about 5 minutes.
  3. Then put the mushrooms and all other ingredients into an ovenproof dish, mix thoroughly and bake in the oven for 40 minutes or until chicken is cooked through.
  4. Try serving with a baked potato or boiled pasta.

Time: 50 min

 

Store leftover in the fridge (but for no longer than 2 days). How about eating it for tomorrows lunch?

  • 2 tsp Worcestershire sauce
