
This cheat's version of an Italian favourite is quick, cheap and healthy.
Method
- Preheat the oven to 180°C or gas mark 4.
- Gently fry the onions in a little olive oil, for about 5 minutes.
- Then put the mushrooms and all other ingredients into an ovenproof dish, mix thoroughly and bake in the oven for 40 minutes or until chicken is cooked through.
- Try serving with a baked potato or boiled pasta.
Serves: 2
Time: 50 min
Store leftover in the fridge (but for no longer than 2 days). How about eating it for tomorrows lunch?
